超市在鲜货经营过程中,主要存在鲜货商品损耗过大的问题。损耗过大造
成超市在鲜货方面的低毛利甚至亏损,不得不提高其它商品的价格来补偿鲜货
的损失,这就降低超市的整体竞争能力。本文通过实地调查厦门著名 X 连锁超
市的鲜货经营,寻找解决问题最佳方案。同时也搜寻鲜货经营的相关文献进行
参考。
本文从全面质量管理的角度,将针对鲜货本身难保存、运输难度大等特点,
集中各大连锁超市实践成果,解决连锁超市在鲜货经营中存在的问题,对鲜货
的采购、运输、存储、生产加工、销售进行优化和设计,重点研究如何降低鲜
货在营销过程中的损耗,既提高超市在鲜货营销上的效益,又实现顾客能够在
超市购买质优价廉的鲜货。

Abstract
At the present time the chain supermarkets hold a prompt development, the
developing speed and scope snatch the eyeballs of this field. It is well-known that
the fresh products’ operation management is a key share in the conduct of
supermarket management. “Food is the first necessity of the people”, fresh products
are the daily necessity concerned to everyone and every family. Of the characters of
the short shelf life, not easy to store up, while the high frequency purchasing from
the customers, thus offering the fresh products are a main measure in absorbing
customer flow in supermarkets. Therefore, the succession of the management in
fresh products in supermarkets is the succession of the management of the
supermarkets.
In supermarkets’ operation processing, the main existing problem is the operation
in fresh products. The large wastage amount causes low gross profit or even deficit,
thus the supermarkets have to increase other goods’ prices to make up the loss,
which bring down the whole competitive strength of the supermarkets. According to
the data from the on-site inquisition on fresh products operation in Xiamen’s
well-known X chain supermarket, this paper tries to figure out the most suitable
solution in conducting the operation of the fresh products, and this paper does
research and reference the concerned articles on fresh products operation as well.
From viewing the aspect of the whole qualifying management, aiming at the
characters of the difficulty part the conservation and conveyance of the fresh
products operation, focusing on the practical achievements in successful conducting
management in supermarkets, this paper tries to solve the problems in fresh products
operation in chain supermarkets,of which optimization and frame the fresh products’
procurement, transportation, conservation, production, processing and distribution,
stress on the studying in lowering the wastage in distributing which not only increase
the profit of the supermarkets but also satisfy costumers’ shopping expectation
toward superior quality and low price fresh products.
